Food service establishments that get produce delivered every one or two days do so for two reasons. Either
the cooler is so small that it can't hold enough to last more than a day or two or they believe that the only
way to have fresh ingredients is to order small amounts more often. Wholesalers who choose to include the cost
of delivery in the items they sell would rather have you order more often as this will increase their profits.
Those that have a "delivery charge" are free to change this charge as their costs change. This reduces their
fuel consumption as it encourages fewer but larger orders. Which do you think is a better energy policy?

Walk-in Coolers both old and new still must obey the laws of physics. Maintaining the proper humidity levels is crucial to the contents regardless of the age of the cooler. Admittedly, the improvement to older coolers is much more pronounced as they are more likely to have leaks and the insulation in the walls deteriorates with age.
What they tell us is that the products move so quickly that there is no time for deterioration.
What they don't say is that their customers must order more to compensate for loss; more profits for them.
Since produce starts to deteriorate when it is harvested, regulating the humidity in their storage coolers

When I first started working with Sorbite I contacted several manufacturers of refrigeration systems.
The idea was to have them include a permanent holder and include a Sorbite panel. There response was that
they already had and electro-mechanical system to regulate the humidity, and so there was no need for any
other system. Of course, anything electro-mechanical consumes energy and is subject to failure.
Consequently, there is no profit in it for them.
